As you know by now, pancakes of every size and color define my weekends. I wouldn’t go a day without them. The thought of them gets me up in the mornings :)
Well this weekend as no exception. I even made some extra batter so I could start my Monday with some too.
Brown Rice Flour Pancakes with Cinnamon Vanilla Frosting (same recipe as the brown rice flour waffles here!)

Purple Protein Pancakes with Blueberry Cream Frosting (same recipe as above but with frosting made from frozen blueberries heated up and mixed with 1 tbsp greek yogurt, 1/4 scoop vanilla protein powder, and some vanilla almond milk)

Blueberry Coconut Flour Vanilla Pancakes

Tweaked this from a recipe found on this increidddddlbe blog - Protein POW! Seriously - check this place out. I have been trying a lottt of her recipes lately!
You’ll need:
4 egg whites
1 scoop vanilla whey protein powder
1/8 cup coconut flour (2 tbsp)
1/4 cup oats
1 tbsp vanilla extract
1/4 cup frozen bluberries that I used to top mine with !
Blend and FRY UP! So good and super fluffy. The best kind :)
Now, I have to do a special shout-out to my awesome bootcampers from Sunday. This is the third week and its been so much fun! Well, this past weekend it started pouring right at 11:05. But no one quit - no one stopped. We kept going and it was awesome!

What a peaceful, wonderful weekend. After OF COURSE watching the Olympic opening ceremonies - decked out in Canandianess, I spent Saturday with a cousin that was in town from London, England (ironically). I basically don’t have any family in the US, so anytime I get to connect with a relative, it is really nice! We spent a few hours in Adams Morgan, and had lunch at Tryst. I have never been to this place before, but it is absolutely adorable! It is definitely a place I would study if I was still in school. I had a great salad - they let you make your own (the best - duh).

That night, Mitch and I took a nice bike ride out to Petworth to see some live jazz at the Petworth Rec Center. It was so nice. Lucky me, there was a Yes! Organic Market down the street and I picked up some yogurt covered almonds (always my go to treat)! It was so relaxing. And it was the cutest little neighborhood!
That morning, I took the best VIDA Extreme class, but this time my all time favorite instructor was not there. I contemplated skipping the class, but decided to just see if another instructor would compare (I am super picky!). It was AWESOME. And kicked my ass. The teacher Greg decided to take it a cross fit route!
This is was the WOD (Workout of the day):

It was a tough one! It took right around 40 minutes with a warm up. It was 2 guys and myself that kicked everyone else in the classes’ butt! After class, one of the guys came up to me and said, “Thanks for challenging/pushing me today!”. Wow! Love keeping up with the boys AND making them work!
As for food this weekend, lets just say I had LOTS O’WAFFLES :)

I had a few requests on Instagram, so I definitely had some great experiments!
1 - Pumpkin Waffles with White Chocolate-Cinnamon Frosting
1/2 cup pumpkin
1/2 cup egg whites
1/4 cup quick oats
1 tbsp ground flax
1 packet truvia
**Blend all and make in your waffle maker! This made 2 waffles for me :)
I then topped with Tera’s Whey in Vanilla Bourbon with some vanilla almond milk and wow, it tasted exactly like white chocolate! SO GOOD! Then added a sprinkle of cinnamon. Amazing.
2 - Sweet Cottage Cheese Brown-Rice Flour Waffles with Vanilla Frosting (Gluten-free)
1/4 cup fat free cottage cheese
1/4 cup brown rice flour
1/4 c egg whites
1 tbsp ground flax
1 packet truvia
1/4 tsp baking powder
splash of vanilla
**Blend all and make in your waffle maker! Again, this made 2 waffles for me!
I made this frosting just by adding my Tera’s Whey in Vanilla and water!
3 - Brown-Rice Flour Waffles with Chocolate Frosting (Gluten-Free)
4 - Green Peanut Butter Banana Waffles with Peanut Butter Chocolate Frosting (Gluten-Free)
Handful of fresh spinach
2 tbsp coconut flour
2 tbsp brown rice flour
2 tbsp PB2
2 tbsp water
1/2 cup egg whites
1/4 tsp baking powder
1/2 banana
**Blend and make into two waffles!
Protein frosting was Chocolate Whey and Chocolate PB2 and water!
These can all be made into pancakes as well! Any other suggestions for combos? I am thinking I may try some savory flavors next. This is legit my new favorite toy. EVERYONE NEEDS ONE!

Please tell me how cute my babyz is? Marley loves peanut butter. So much he will sit and lick his lips as I eat it. Well, this is PB2. I guess he isn’t too picky ;) Like mother like son.
Today was SHOULDA day at the gym. I love training my shoulders.
Here is what I did:

Something that has been saving my after-work workouts is my Fitmixer Amino Acids drink.

I have seen a TON of instagrammers and fellow fitness bloggers raving about this product, so I HAD to try it. And its amazing. I still use my GNC Prosculpt in the AM, but the Mega-Ignite weren’t doing anything for me anymore.
I drink a few sips before my workout, and then drink it throughout. When a long workout is needed, especially when I have to do strength and cardio workouts back to back, this is the perfect tool to maximize!
The Fitmixer aminos helpsto increase nitric oxide which has proven to have a variety of benefits including increased oxygen delivery throughout the body to reduce fatigue and improve muscle recovery. It gives me a boost I need to push through. And its delicious :) You can buy it here - I have also heard their protein powder is AMAZING!
I also recently mastered a new overnight oats recipe. Who doesn’t love these things? When its going to be 100 degrees and I have to be at work for an early breakfast, this is exactly what I need.
Premade deliciousness.

What you’ll need:
Before bed, mix the following:
1/2 cup old fashioned oats (it gives a nuttier texture than quick oats!)
1/2 cup unsweetened vanilla almond milk
1/2 cup water
1 serving vanilla protein powder
1 tsp chia seeds
Let it sit overnight in the fridge. Then top with fresh fruit, a dallop of greek yogurt, and some crunchy almonds.

CommentsI woke up this morning with a hangover. Trying this “drinking in moderation” thing. I definitely have gone through a phase of cutting drinking out of my life completely. But I really did miss it. I got myself out of bed early this morning anyways and made my favorite breakfast - Banana Oatmeal Chia Pancakes. Seriously - they are the best thing ever. My absolute favorite.
Just look at these babies

They are seriously incredible. Here is what you’ll need:

1/3 cup quick oats
2 tbsp fat free greek yogurt
1/4 cup egg whites
2 tsp chia seeds
1 tsp ground cinnamon
1/2 mashed bananas
Mix together with a blender

Then fry those babies up

Then I topped with some delicious chocolate PB2 protein frosting:
1/2 scoop chocolate whey
1 tbsp PB2
Few splashes of unsweetened almond milk
Mix to the right consistency - and then spread on your pancakes and top with fruit!

Nutrition information (just the pancakes)
Calories: 262
Fat: 5g
Carbs: 41 g - get those carbs in nice and early! These are healthy carbs from oats and fruit!
Fiber: 6
Protein: 14 g - this isn’t much for breakfast, so that’s why I make my protein frosting :)
Now off to the farmers market to meet Mr. Kaan Yalkin and to make Mitch buy me flowers :)
