I was a single gal this weekend. Mitch was back at home with this little guy -

And while he was gone, I must admit another man stole my heart -

We had a wonderful weekend together :)

I had a great weekend with friends, but I always came back to this little guy. He is too hard to leave at home alone!

We made some wonderful treats this weekend though…

I found the most incredible ingredient on Friday and haven’t been able to put it down.

Cheese.

I must admit, I have deprived myself of cheese my whole eating healthy life. I see it as a cheat food and a guilty pleasure. And I LOVE cheese. I love melted cheese and I would put it on about anything.

Well I have found something even better.

Almond cheese. Yes, cheese made of almonds. I have to say, it is the most deliciously amazing thing I have ever tasted.

Look at it MELTED in my chicken quesadilla. Wait, what? I had a quesadilla and it fit in my macros? Sure did people.

1 oz (which is plenty enough) is 50 calories, 1 g of fat, 190 mg of sodium, 3 g of carbs, and a whopping 9 g of protein. Hello amazing.

And its gluten free, lactose free, no GMO’s and NO preservatives. They have lots of different flavors and apparently have a shredded version. I found this jalapeno jack flavor at Yes! Organic Market but saw lots at Whole Foods as well. GET IT.

These have been my lunch the past two days and I had these two days in a row for a reason!

What you’ll need:

2 corn tortillas (Food for Life has the best kind that crisp up so nicely in the oven)
4 oz lean ground turkey
1 oz Almond Cheese
Toppings of your choice

I was browsing through fellow blogger Crystal and her amazing blog Spoonful of Fit and she had this great idea - to make taco shells out of our approved corn tortillas.

Heat your oven to 400. Drape your tortillas over the vertical rails of your baking rack like this -

Once they are nice and crispy (about 5-10 minutes) add your toppings. I heated up my turkey with the almond cheese and it melted perfectly. The best thing about these homemade shells is that they don’t break like the store bought ones.

And they’re damn good.

It doesn’t get better than this.
