What I ate Wednesday

I love What I ate Wednesday!!! And guys, this is actually what I ate TODAY (usually, its the day before) but I had some great and fabulous things to share with you.

I had my amazing Brown-Rice Flour waffles topped with some delicious protein frosting, made from my new Tera’s Whey Bourbon Vanilla protein powder. Let me tell you, this tasted like white chocolate. Since the waffle was pretty small, I had a full serving of the whey mixed with unsweetened vanilla almond milk and it was legit divine! Topped with fresh strawberries of course…

For a midday snack, I had my Coconut-Flour Pumpkin Protein cake. This stuff is so good. Since it was an early morning, I live for my 10:30 AM snack :)

For lunch, I had some Lean Green Turkey burgers, steamed broccoli, and some sweet potato tots.

Isn’t this a little bowl of heaven? I had a lunch event today, but ate some disgusting lettuce to tide me over so I could come back and eat this instead :)

So you want the recipes? Ya. They are bomb.

Just look at these little guys cooking?

I found the recipe for these tots on He and She Eat Clean. Let me tell you - best decision ever. Not only does ONE sweet potato make 40 tots, they are freakin delicious!!

What you’ll need:

1 lb sweet potatoes - that meant 1 big one for me!
1 medium yellow onion
2 tbsp oat flour
1 tsp cayenne/chipotle/chili powder - whatever you prefer for a little KICK!
1/2 tsp garlic powder
1/2 tsp ground black pepper
2 egg whites

-Preheat over to 375
-Shread your sweet potato(s) with the large holes of a cheese grater
-Shread your onion with the large holes of a cheese grater, drain out all liquid
-Combine all ingredients (except the egg whites), then once everything is mixed, add the whites
-shape into small tots! I used a tablespoon measuring spoon to shape it into a ball. See what works for you!
-Mine made a little over 40 tots. Place on baking sheet and bake until crispy - appx 30 minutes. I even flipped mine halfway through!

Each tot comes to about 12 calories each. I had 8 with lunch today and it was a perfect little side of carbs and amazingness!

And those burger? Each burger is 2 oz of lean turkey. I coated them with the following GREEEN mixture:

-Blend together a big handful of spinach, spices of your choice (I through in a bunch of random SALT FREE things!), garlic, 3 egg whites, 1/2 cup quick oats
-It will form a greeny paste; Take each of your pre-weighed turkey meat and coat with mixture. Then cook on a frying pan!

These were my first time trying this and they were soo good. I was so sick of my regular turkey burgers, and this coating makes them really moist and just plain good!

For my pre-workout/mid-date snack I had my new favorite snack. I found this super expensive (only buying once) NuttZo Omega-3 7 Nut & Seed Butter. This stuff is heaven. If you like crunchy ANYTHING, this is your thing. You can literally see the flax seeds, cashews, peanuts, almonds, etc in each bite. Yes, the jar was $12. BUT I never let myself have PB at home anymore because I eat the whole jar, so this was a nice little treat :)

I topped 2 brown rice cakes with 1/4 cup fat free cottage cheese and 1 tbsp of this jar of splendor!

For my post-workout shake, I am having my sample of Tera’s Whey in Wolfberry. Umm what? Yes, it is goji berry. And yes, I am excited. I haven never tried it, so I will be sure to let you know. I love Tera’s Whey so much!! I got this package from Open Sky, with lots of different sample packets. Its great - especially because its so hard to find!

Gosh. I love all my food! Haha!
