Its raining, it’s not 100 degrees, and I feel like being lazy. Don’t judge me. I already got in my workout in - my favorite VIDA Extreme class. Its at 11 am so its the perfect time, and it kicks my ass each and every time. When I get home, I literally collapse. So I need today to do, just about nothing. That is what makes it the best day!!
Although this week at work was little more relaxed, the heat makes the week that much more exhausting. I still got in my Insanity workouts in the morning, and strength workouts at night. I even tried out a few new snacks!I thought I’d share with you guys a little of both….
Lets start with some strength workouts. I know the “guy” part of the gym is a bit intimidating, but as I have said time and time again, don’t knock it till you try it! Mitch always tells me - just tell yourself “this is why I’m hott” (compliments of Snoop Dog of course).
Here is a killer back workout:

Supersets are great - they are two workouts done back to back with no rest in between. So for example, Superset 3, you will do 8 reps of deadlifts then IMMEDIATELY 8 reps of bent over barbell rows. Take no more than 30 seconds rest and then do the two again, back to back. The number of sets are on the left hand side.
I’ve been looking for some new snack recipes to try, and follow this great gal’s instagram where she experiments on basically EVERYTHING. Well I decided to try out a few of her recipes and they were delish!
I tried the Chocolate Chip Protein Cake:
1 egg white (2 tbsp if out of a carton)
1/2 cup plain fat free greek yogurt (I use Fage)
1 tbsp unsweetened almond milk
1/4 cup unsweetened apple sauce
1 tsp vanilla extract
3 packets (or 3 teaspoons) of your favorite sweetener (I use Truvia)
2 scoops vanilla protein powder of your choice (I used 2 packets of Tera’s whey)
1/4 cup oat flour
1 tsp baking powder
1 ounce dark chocolate chopped up (I used 100% cacao; for next time I will use something a bit sweeter :) )
Mix the wet ingredients, then add all the dry ingredients. Mix well. Add your chopped up chocolate.
I made mine in 2 mini loaf pans, but feel free to bake in whatever you like! She did it in a big bread pan. It would work in an 8X8 pan well I think!
Bake 350 for 45-50 min. Check half way through as mine definitely were faster than that!
And here ya go….

These are super moist and delicious. I cut mine in 6 pieces, with each being 100 calories, 3.3 g of fat, 8.6 carbs, and 11.4 g of protein. Pretty good!
Another treat of hers I tried was compliments of Mitch’s mothers amazzzzing gift skills. Just look a these amazing items she got me :)

That’s right! A waffle maker and some popsicle makers. I haven’t mastered a waffle recipe quitteee yet (I messed up a few times, and my kitchen definitely paid!) But I did make some some super awesome popsicles!
1 1/4 cup fat free plain greek yogurt
5 tpsp PB2 (no, you cannot use regular peanut butter for these!)
6 tbsp of unsweetened vanilla almond milk
3 packets of your favorite sweetener (TRUVIAA baby)
A handful of dark chocolate chips (I used 100% cacao)
Mix all together and pour in your popsicle trays
Freeze overnight

Yum, yum and YUM! Perfect dessert or snack! They round out to be about 80 calories a pop and the recipe makes four.
