Have you ever seen “The Wild and Wonderful Whites of West Virginia”?

Well - not all of West Virginia is like this (although you must see this - its hilarious!) I work for a Senator from West Virginia and although work out of DC, I do get the chance to head to West Virginia every so often. It is definitely wild and wonderful, but not all places are like this crazy family in Boone County!

This weekend, I had the pleasure of going to the famous Greenbrier Resort in beautiful White Sulphur Springs. I luckily got to bring the boy this time - so he drove, and I sat and enjoyed my book. Of course, I packed my lunch for the 4 hour drive - my yummy spinach turkey burgers, some red tomatoes, and some homemade trailmix of raw unsalted chopped cashews, unsweetened carob, and raw unsalted pistachio nuggets. Perfect little mixture.

The first thought when you drive up to this island of a resort is - I do not belong here. Its regal, pure southern elegance. Designed by Dorothy Draper, the interior seems out of Alice and Wonderful.

I want my house to be Tiffany blue and black and white checker floors. So beautiful.

And just look at this wallpaper. Can I have a dress made of this please?

Luckily, Saturday was my gym day off this week so I could relax and not worry about getting a workout in. Instead, after working all morning, I lounged by the pool the rest of the day.

Work quickly turned into a mini vacay with the boy. Perfection.

Of course, all good things come to an end and Sunday we were back on the road home. I tried to workout in the morning but I just couldn’t do it. The bed was too comfy - like a big cloud. But it was in the back of my head all day that I had to workout still (that’s why I LOVE getting it over with in the morning!!).

I had no energy by the time we got home. I knew if anything could push me though, it was my Mega-Ignite from GNC GenetixHD line.

I thank this bottle for my workout. I killed it. Mega-Ignite is a themogenic, there to increase energy and give you a boost before your workout. It also increases calorie burning before, during, and after your workout. Hello amazing.

I first went for a 3 mile run with my baby Marley. He was dying but the end of it! I had to carry him up the hill :) But he loved it.

Look at this cutie. I missed him so much I just had to take him along!

I then killed my Insanity plyometric cardio circuit. I was DRIPPING in sweat after (my favorite!). Honestly, If anyone is thinking of trying Insanity, DO IT. It is tough. But that is what a workout is supposed to be! Even I have to stop every once in a while - its good shit! TRY IT! You will not be disappointed!

After my schwedy session, I had to prep some food for the next day. I didn’t have time for full on food prep Sunday, but I did make a mouth watering lunch for my Monday.

My favorite chinese food of all time - and what I would devour as a fatty kid - was fried rice. Well I made an easy, CLEAN Shrimp Fried Rice.

What you’ll need (for one serving):

1/2 cup pre-cooked brown rice
3 tbsp egg whites
2 cups cooked broccoli
4 oz (I used 11 medium) shrimp
1/4 cup white onion
Bragg’s Liquid Aminos (ie soy sauce flavor without the sodium and junk!)
Garlic powder

Steam your broccoli cook your brown rice ahead of time.

Start but sauteing your shrimp and onion, adding garlic powder and other seasoning of your choice.

In another pan, cook your egg whites, dicing it as you cook to create strips/chunks.

Combine all ingredients, and spray on your liquid aminos (soy sauce will work, but use low/no-sodium versions!)

This was so amazing- one of my favorite lunches. It is so important to switch up your meals. I was getting really bored of chicken - chicken and rice, chicken and bread, chicken in veggies. Don’t get me wrong, I love chicken. But having a different type of protein every meal just makes clean eating that much more enjoyable/amazing.

Although I already miss work/vacay/WV, It is good to be back. I missed my lil puppy, baking, my delicious food, and my gym!
